Jorge Dávila

With a degree in Hispanic philology and an advanced diploma in catering, he studied at the School of Hospitality and Tourism of Madrid. Sommelier Course. Time spent training in France. Awarded prizes on numerous occasions by the critics. The experts place him among the best restaurant managers in the country.

David García

Trained with the master Martín Berasategui, this young Basque worked alongside Andoni Luis Aduriz and David de Jorge, among others, to learn the trade. Not only that, he also did a stint at El Bulli. He last worked at the Guggeheim; ten years alongside Josean Martínez.

José María Marrón

30 years of experience in waiter service and as a sommelier. He trained in Madrid, London, Palma de Mallorca... He is a member of important tasting committees in publications and sector events. Winner of the Nariz de Oro 1998.
